Turkey Burgers with Peaches and Blueberries


These turkey burgers are perfect for summer. Quick, easy, and fresh. Also, you don't have to use an oven, which is always nice on a hot day. I followed the recipe loosely and added a whole extra peach and more blueberries. It worked out well because the fruit is tasty on its own.

4 small peaches
1 lb. ground turkey
4 slices Monterey Jack cheese
1/2 cup blueberries
1/4 tsp. chili powder
4 thick slices toasted garlic bread*
Fresh mint (optional)

1. Finely chop one of the peaches. In a bowl mix chopped peach with ground turkey, salt and pepper. Shape into four patties. Grill on medium high heat for 5 minutes per side until no more pink remains. Add cheese and let melt.
2. Meanwhile coarsely chop remaining peaches; combine in a skillet with blueberries and chili powder. Cook, stirring occasionally, over medium heat for 5 minutes or until heated through and juicy.
3. Serve turkey burgers on garlic bread topped with peaches, blueberries and mint.

*For garlic bread, I used a loaf of fresh French bread. Slice, spread with butter and sprinkle garlic powder and sea salt, toast on the grill. Don't leave it unattended for too long, it can burn quickly!
